This videotape dispenses information contained in a waitress training manual published by the Government of Nova Scotia in 1963. It also takes its title from that document, which was still available in at least one restaurant in 1982. A male fills the role of the waitress in the videotape and he follows the commands of the narrator, all of which are excerpts from the instructional text. The work juxtaposes two divergent attitudes: that of the booklet's authors at the time of its printing, and that of the artist/producer in response to the continued availability of such prescriptive material during the 1980's.
